This box was a doozy! There was a huuuuuuuge watermelon hiding in the bottom. Of course, it was filled with all types of delici-osity (Is that a realword? It is now!). If you missed our past pickups, you can read about them HERE. This week we received:

Here's the plan:

Peaches, Plums, Apples, Cucumbers- Snacks
Beefsteak and Plum Tomatoes- I used to make this Chicken recipe all the time. I think I have to resurrect it.
Watermelon- I am the weirdo that doesn't really like watermelon. I will slice some up for John and the girls, though. Jemma started asking for Watermelon juice the minute she saw it, so I guess that is what the rest will become. It is super simple... just watermelon flesh in the blender. Shake before serving if you are saving it for later!
Beans- Green Bean and Shrimp Stir-Fry Rice
Beets- Macaroni Monday! This sauce sounds SO. GOOD. I cannot wait to try it.
Swiss Chard- The chard fritters were a hit, so I may just make them again. If I change up the seasonings, no one will know, right? Okay, okay, I'll sub the kale for chard on the chicken recipe.
Peppers- Roasted, fried, lactofermented... no idea. Maybe just snacked on.
Summer Squash- Tater tots!
Corn- On the side for Burger Night!
Red Onions- Added to the pantry stash... unless they get cooked up to go on the burgers Saturday...
Leeks- Used as onions in the pantry stash
Kohlrabi- Oh no! We ate all the dill! No more dilly kohlrabi!

Not wanting to take a picture, but not wanting a certain baby sister to be in the picture instead... It's so hard being 3!

Another week, another box. Now that summer is in full swing, I am having a ball with all of the yummy surprises. Planning everything out like this helps ensure nothing is lost in the back of the fridge, but it isn't set in stone. I change it up if the mood strikes!

Here's the plan:

Peaches, Plums, Radishes, Scallions, and Cucumbers- Snacks, as usual
Arugula- This is a perfect base for a tomato arugula salad... perhaps with chicken?
Leeks- They will probably be used as onions would be.
Parsley- It is beautiful, I think I will make a tabbouleh with the tomatoes and cucumber!
Sweet Banana Peppers- I'll probably lactoferment most, and use the rest on a pizza.
Eggplant- I never ended up making a baba ganoush with last week's. Maybe this one will?
Bell Peppers- Roasted, definitely roasted
Cherry, Plum, and Beefsteak Tomatoes- tabbouleh, and a tomato/arugula salad
Yellow Beans- So... I saw these green bean "chips" at the checkout counter. They looked so good, so I think I have to try making them with the yellow beans
Carrots- Carrot mash with pork chops
Tomatillos- John makes a mean salsa with tomatillos. I'll leave them for him.

This is Jemma's favorite part about our produce pickup (besides the fruit). She immediately asks if it is time for her to do her TADA!!! Makes me smile every time!

John picked up another CSA box this week. The girls and I were in Rhode Island, so there are no pictures of our haul. We're just grateful he braved the traffic to pick it up after work for us! If you missed the past pickups, you can read about them HERE. This week we received:

Broccoli florets- Roasted for a side with dinner Saturday
Cauliflower- Base for Macaroni Monday: Cauliflower Pasta
Carrots and Broccoli Stems- Shredded in a salad as a side with Tuesday's dinner
Collards- I'm going to try lactofermenting them this time. The girls (especially Juliet) are really into fermented veggies right now. They even drink the fermenting liquid. I need to take full advantage of this new obsession!
Arugula- This was a pretty sad looking by the time I got home, so I composted it. :(
Green and Yellow Beans- Thinking of blanching and freezing these for the future
Bell Peppers Sustainable- I'm definitely roasting and jarring these in the fridge!
Cabbage- In a slaw with fish tacos
Eggplants- marinated in balsamic and then broiled or grilled. That's my favorite way to eat them, so I'm pretty sure I'm sticking with it.
Onions and Garlic- as ingredients in everything. We got both red and yellow onions this time. The red ones are in a basket on the counter, and when Jemma saw them, she said, "BEETS! YAY!!! Wait... Why are they in the onion basket?"
